Irish Oat Bread
2 ½ C Oatmeal
2 C Buttermilk or sour milk
3 C Flour
1 Tbs Brown sugar
1 tsp Salt
1 tsp Baking soda
Soak oatmeal overnight (or a minimum of 3 hours) in milk.
Sift together other ingredients and combine with oats. It will look too dry, but don't worry. Knead for a few minutes until a smooth dough forms.
Press dough into 1½ inch thick circle.
Cut deep cross in top for heat penetration.
Place in greased pie pan.
Bake 34 to 40 minutes at 450.
Serve warm.
